Recipe of the Week: German Pancakes

This recipe is great for breakfast or when you need a quick dinner. Goes great with a side of fresh fruit. Our daughter learned how to make this in junior high and we were hooked. Now it’s the whole family’s favorite! Joy Lundberg

German Pancakes
6 eggs
1 cup milk
½ tsp salt
1 cup flour
5 Tbsp butter
Whip eggs until thick and lemon colored, add milk, flour and salt. Mix well. Melt butter in 9 x12 pan. Pour batter into melted pan of butter. Bake 450 degrees for 15 – 20 minutes. will rise up in fluffy puffs. Serve immediately with warm maple syrup.
Feeds 4 – 6, depending on size of appetites.
